Ever so often I try something new and this time it’s Chili. This wasn’t a thing at our house growing up, but someone I recently went to lunch with had it and so I checked around for an easy recipe. I made quite a few adjustments to the recipe I liked and this is what I came up with. If you’re anything like me, you want to get in and out of the kitchen as fast as possible. Chili, although can contain many ingredients, I chose ingredients already in my pantry to suit my taste. Fast meals with easy to find ingredients are a priority for me.
You’ll need:
- 1 pound mince beef
- 1 Can kidney (red) beans, drained and washed
- Chopped onions (as much as you like)
- Chopped chives
- Chopped celery
- Minced or crushed garlic (2-3 cloves)
- Diced tomatoes (canned if you want but fresh is always better)
- Chopped pimento peppers (optional, but a staple in Caribbean cooking)
- Salt to taste
- Black pepper to taste
- 1/2 cup ketchup (or any tomato sauce you like)
- 2 Tbsp chili powder
- 1 Tbsp butter
**Add any other herb or ingredient that you like.
Season the mince beef with the onions, chives, celery, garlic, peppers, tomatoes, salt and pepper. Let marinate for a time you prefer. I usually leave for a couple hours. Place butter in non-stick skillet or frying pan. When melted, add minced beef, ketchup and chili powder . Add beans after 10 minutes. Bring to a boil, reduce heat to low and let simmer (not dry out) until meat is soft (an additional 10 minutes depending on how you prefer it).
Garnish with celery or chopped chives and serve.
Cooking time: Approximately 20-30 minutes
